Chewy Chocolate Brownies



 Yes, its is supposed to look curdled. Don't worry though, it will become smooth soon.



See? Smooth...

I suppose you could add anything at this point, I added semi-sweet chocolate chips.


Make sure to let them cool a bit before cutting them...and make sure you have milk too.

Chewy Chocolate Brownies (recipe)

Ingredients:
1/3 cup unsweetened cocoa
1/2 cup boiling water
2 ounces unsweetened chocolate
4 tablespoons (1/2 stick) unsalted butter
1/2 cup vegetable oil
2 large eggs
2 large egg yolks
2 teaspoons vanilla extract
2 1/2 cups sugar
1 3/4 cups unbleached all-purpose flour
3/4 teaspoon table salt
6 ounces bittersweet chocolate



Directions:

1. Adjust oven rack to lowest position and heat oven to 350 degrees. Line a 13X9 baking pan with tin foil. Spray with nonstick cooking spray.

2. Whisk cocoa and boiling water together in large bowl until smooth. Add unsweetened chocolate and whisk until chocolate is melted. (Just be sure to do this all quickly so the chocolate will melt.)

3. Whisk in melted butter and oil. (Mixture may look curdled.) Add eggs, yolks, and vanilla and continue to whisk until smooth and homogeneous. (Just keep whisking.)

4. Whisk in sugar until fully incorporated. Add flour and salt and mix with rubber spatula until combined. Fold in chocolate pieces (or whatever pieces you want. Toffee, milk chocolate, nuts.)

5. Scrape batter into prepared pan and bake 30 to 35 minutes or until toothpick inserted halfway between edge and center comes out with just a few moist crumbs attached.

6. After slightly cool remove brownies using the tin foil and place on rack to cool even more. Cut into 2-inch squares and serve.

Welcome!

Welcome everyone!
This is my new blog and yes it is called fried oatmeal. The name comes from back when I was in elementary school. I would get right in the car after school and ask my mom what was for dinner. She'd usually reply fried oatmeal!
